Ingredients
- 6 cups broccoli florets
- 2.5 cups vegetable broth or low sodium chicken broth
- 1 cup full fat canned coconut milk
- 2 teaspoons Homemade Garlic Salt Seasoning
Instructions
For the Stovetop
- Add all ingredients to a large stockpot. Bring to a boil over medium high heat.
- Reduce heat and simmer for 10-15 minutes, until broccoli is tender.
- Remove from heat and puree the soup with an immersion blender until creamy.
For the Instant Pot
- Add broth, coconut milk, and seasoning to the pot. Stir to combine.
- Add the broccoli to the pot. Seal lid and cook for 6 minutes on the Manual setting. Release pressure manually.
- Using an immersion blender, puree the soup until creamy.

1 tablespoon dried minced garlic
