Ingredients

  • 1.5 lbs boneless skinless chicken breast
  • 3 bell peppers (red, green, and yellow) sliced
  • 1 yellow onion sliced
  • 15 oz diced tomatoes
  • 3 tablespoons Homemade Fajita Seasoning see recipe below
  • fresh lime juice optional
  • fresh cilantro optional

Instructions

  • Layer the peppers and onion into the bottom of the slow cooker.
  • Add chicken breasts and sprinkle with the fajita seasoning.
  • Pour the tomatoes over top of the chicken.
  • Cover and cook on Low for 5-6 hours or High for 3-4 hours.
  • Remove chicken and slice or shred. Return to the slow cooker and toss everything together.
  • Squeeze fresh lime juice over fajita mixture and sprinkle with fresh cilantro if desired.
