- 1.5 lbs boneless skinless chicken breast
- 3 bell peppers (red, green, and yellow) sliced
- 1 yellow onion sliced
- 15 oz diced tomatoes
- 3 tablespoons Homemade Fajita Seasoning see recipe below
- fresh lime juice optional
- fresh cilantro optional
Layer the peppers and onion into the bottom of the slow cooker.
Add chicken breasts and sprinkle with the fajita seasoning.
Pour the tomatoes over top of the chicken.
Cover and cook on Low for 5-6 hours or High for 3-4 hours.
Remove chicken and slice or shred. Return to the slow cooker and toss everything together.
Squeeze fresh lime juice over fajita mixture and sprinkle with fresh cilantro if desired.
