Fresh Lowfat Apple Snack Cake

Ingredients

  • 1 3/4 cups peeled chopped apples
  • 1/2 cup sugar
  • 1 1/2 cups white whole wheat flour or regular flour
  • 1 tsp baking soda
  • 3/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup liquid coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 egg beaten
  • 1/2 cup raisins optional
  • 1/2 cup chopped walnuts optional

Instructions

  • Preheat oven to 350 degrees.
  • Peel and chop apples. Place in a large bowl, add sugar and let stand while preparing dry ingredients.
  • In a separate bowl, sift flour, soda, salt, and spices.
  • Blend egg, oil, and applesauce into apple/sugar mixture.
  • Add dry ingredients to apple mixture, including raisins and nuts if using.
  • Pour into 8X8 greased baking dish and bake for 30 minutes.
