For the Fresh Salsa:
- 6-8 Roma tomatoes eeded and roughly chopped
- 1/2 large green pepper roughly chopped
- 1 small yellow onion roughly chopped
- 2 cloves garlic
- juice of 1 lime
- 2 teaspoons kosher salt
- 1 small jalapeno seeded and chopped (optional)
For the Guacamole:
- 2 large avocados
- 1 lime juiced
- 1 1/2 teaspoon kosher salt
- 1/2 teaspoon cumin
- 2 tablespoons minced red onion
- 1 roma tomato diced
To prepare Salsa, combine all ingredients in a food processor. Pulse a few times to roughly chop veggies. For a more pureed salsa, continue to pulse until reached desired consistency. Season to taste with salt and pepper.
To prepare Guacamole, begin by mashing avocadoes in a medium bowl. Add lime juice, salt, and cumin and stir to combine. Fold in red onion and tomatoes. Store in refrigerator until ready to serve.
