- 8 redksin potatoes medium sized
- 2 tablespoons avocado oil
- 1.5 teaspoons Greek Seasoning Blend see recipe below
Greek Seasoning Blend
- 1 tablespoon dried oregano
- 1 tablespoon dried dill
- 1 tablespoon dried onion flakes
- 1 tablespoon dried garlic flakes
- 1 tablespoon dried parsley
- 2 teaspoons basil
- 1 teaspoon thyme
- 1 teaspoon marjoram
- 1 teaspoon black pepper
- 1 tablespoon kosher salt
Preheat oven to 400 degrees. Line a baking sheet with parchment paper. To make the seasoning blend, combine all spices and stir well. Store in a small mason jar or air tight container.
Cut potatoes into wedges and place on baking sheet. Pour avocado oil over potatoes. Add seasoning and toss to coat.
Turn all potatoes cut side up (do not crowd on baking sheet) and roast for 35 minutes, or until browned and crispy on top.
