Ingredients

  • 2 lbs boneless skinless chicken breasts cut into large chunks
  • 1/2-2/3 cup fresh lemon juice (about 4 lemons)
  • 1/4 cup olive or avocado oil
  • 1 1/2 tablespoons Dijon mustard
  • 1 tablespoon honey omit for Whole30
  • 1 teaspoon chopped fresh Greek oregano or regular oregano
  • 1 teaspoon chopped fresh thyme leaves
  • 1 teaspoon kosher salt

Instructions

  • Combine fresh lemon juice, olive oil, Dijon, honey, oregano, thyme, and salt. Whisk well. Pour over chicken chunks, cover, and refrigerate for at least 1 hour. 
  • Thread chicken onto skewers and place on preheated grill, turning throughout cooking, until chicken is cooked through.
