- 2 cups Homemade Paleo Flour Blend see recipe below
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 egg beaten
- 1/3 cup melted coconut oil
- 1/3 cup pure maple syrup
- 1/2 cup coconut milk
- 1/2 cup dairy free chocolate chips such as Enjoy Life brand
Preheat oven to 400 degrees. Prepare a muffin tin with cooking spray.
Combine dry ingredients in a large bowl and stir well. Combine the wet ingredients in a separate bowl, stir, then add to dry ingredients.
Scoop mixture into muffin tray, filling about 1/2 full. Bake for 18 minutes or until the muffins are a light golden brown.
