- 8 large whole wheat tortillas
- 1 lb ground pork
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 medium red bell pepper diced
- 8 eggs beaten
- 2 cups spinach leaves chopped
- 4 oz grated raw cheddar
Preheat a large nonstick skillet over medium high heat. Add the ground pork and seasonings, crumbling the meat. Add the bell pepper and stir until pork is cooked through and peppers are softened. Drain any excess grease and set aside to cool slightly.
Wipe the skillet clean and preheat over medium heat. Add the beaten eggs and spinach. Cook and stir until eggs are set and no longer runny. Let cool slightly.
Assemble the burritos by placing equal amounts of sausage and egg mixtures onto each tortilla. Sprinkle 1-2 tablespoons of cheddar on top.
Folding the ends in, roll the burritos tightly and place seam side down on a large baking sheet. Place in freezer.
Once burritos are frozen (or nearly frozen), place in a large freezer bag.
To serve, remove the frozen burrito and place on a microwave safe plate. Microwave for 3-4 minutes (will depend on your microwave.) Burritos can be stored in the freezer for up to 3 months.
