Healthy Lemon Blueberry Bread

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1 cup fat free plain Greek yogurt or vanilla
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut oil liquid form
  • 3 eggs
  • 2 tablespoons fresh lemon juice
  • 2 tsp lemon zest
  • 1 tsp vanilla
  • 1 1/2 cups frozen blueberries

Instructions

  • Preheat oven to 350 degrees.
  • Whisk together flour, baking powder, and salt in a medium bowl.
  • In a large bowl, whisk together sugar, yogurt, applesauce, coconut oil, eggs, lemon juice, lemon zest, and vanilla.
  • Gently stir frozen blueberries into flour mixture to coat them.
  • Add flour mixture to wet ingredients and fold until combined.
  • Pour batter into loaf pan coated with baking spray (I like the kind with flour added.) Bake for 55-60 minutes.
