- 1 lb ground beef, turkey, or venison
- 1 cup chopped onion
- 2 teaspoons minced garlic
- 4 oz. diced green chilies
- 2 cups diced bell peppers
- 1 15 oz. can diced tomatoes
- 1 cup crushed tomatoes
- 2 1/2 tablespoons homemade taco & fajita seasoning see recipe below
- 2 cups low sodium chicken or beef broth
- 2 cups cooked cauliflower rice or brown rice for non-Whole30/Paleo
Set Instant Pot to Saute mode. Add ground meat and cook until browned.
Add onion, garlic, green chilis, and peppers to the pot, cooking and stirring for another 1-2 minutes.
Add tomatoes, crushed tomatoes, seasoning, and broth to the pot. Stir to combine, seal the lid, and set for 10 minutes on Manual setting.
When cycle is complete, quick release pressure. Ladle into bowls, adding a generous scoop of cauliflower rice to each bowl.
