- 1 1/4 cups oats gluten free if desired
- 3/4 cup pumpkin puree
- 1/4 cup unsweetened applesauce
- 3 Medjool dates
- 2 eggs
- 3 tablespoons almond milk
- 1 teaspoon vanilla
- 1 teaspoon pumpkin pie spice see homemade recipe below
- 1/4 cup dark chocolate chips optional use dairy free chips for DF
Preheat oven to 350 degrees. Prepare a mini muffin tin with cooking spray.
Add all ingredients (except chocolate chips) to a high speed blender. Process until smooth.
Stir in the chocolate chips and pour mixture into muffin tin. Bake for 12 minutes.
