Ingredients

  • 1 cup oats
  • 3/4 cup ground walnuts
  • 1/2 cup crunchy peanut butter
  • 1/4 cup honey
  • 2 tablespoons ground flax
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 1/4 cup dried cranberries

Instructions

  • Add walnuts to a food processor and pulse until ground to a crumb like consistency.
  • In a large bowl, combine oats, walnuts, peanut butter, honey, flax, cinnamon, and vanilla. Mix until everything is incorporated well (dough will be stiff.) Stir in cranberries. 
  • Form into one inch balls and place on a waxed paper lined cookie sheet. Chill in refrigerator or freezer until set (at least 30 minutes.) Keep refrigerated in a closed container.
