Ingredients

  • 1 cup quick oats
  • 1 1/4 cup oat flour
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 1/2 cup sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt

Instructions

  • Preheat oven to 350 degrees. Prepare a muffin tin with paper liners or spray with non-stick cooking spray.
  • Combine applesauce, eggs, and sugar in a large bowl. Stir well.
  • Add oat flour, baking soda, baking powder, cinnamon, salt, and oats. Stir to combine.
  • Fold in any add-ins if using.
  • Scoop batter into muffin tin, filling muffin cups 3/4 full.
  • Bake for 18-22 minutes, until a toothpick entered into the center comes out clean.
  • Cool for a few minutes in the muffin tin, then remove muffins to cool further.
