- 1 cup quick oats
- 1 1/4 cup oat flour
- 1 cup unsweetened applesauce
- 2 eggs
- 1/2 cup sugar
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
Preheat oven to 350 degrees. Prepare a muffin tin with paper liners or spray with non-stick cooking spray.
Combine applesauce, eggs, and sugar in a large bowl. Stir well.
Add oat flour, baking soda, baking powder, cinnamon, salt, and oats. Stir to combine.
Fold in any add-ins if using.
Scoop batter into muffin tin, filling muffin cups 3/4 full.
Bake for 18-22 minutes, until a toothpick entered into the center comes out clean.
Cool for a few minutes in the muffin tin, then remove muffins to cool further.
