- 1.5 lb boneless skinless chicken breasts
- 12 oz grape tomatoes or cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 oz fresh mozzarella cheese
- fresh basil leaves
Preheat the oven to 375 degrees.
Add the oil to a large deep skillet and heat over medium high heat.
Add the chicken breasts to the hot oil, searing for 3-4 minutes. Flip and cook for another 3 minutes until starting to brown.
Turn off the heat. Add the tomatoes to the pan, around the chicken pieces.
Arrange slices of mozzarella over the chicken and place the skillet in the oven. Bake for 15 minutes.
Remove from oven and sprinkle with fresh chopped basil. Serve immediately.
