preheat oven to 400 degrees.
place chicken, peppers, and onion on a large baking sheet. Sprinkle with taco seasoning and olive oil. Toss to combine.
Bake for 15-18 minutes, stirring once, until chicken is cooked through. Squeeze juice from 1/2 lime over chicken and veggies.
For avocado crème, combine all ingredients in food processor and blend well.
For cilantro lime rice, stir lime juice and cilantro into cooked rice.
Serve chicken and veggies over rice, topped with avocado crème. Or serve with soft corn or flour tortillas and your favorite toppings.
