- 1/2 cup coconut sugar
- 3 tablespoons melted coconut oil
- 3/4 cup unsweetened applesauce
- 2 eggs
- 1 1/2 cups almond flour
- 1/2 cup tapioca flour
- 2 tablespoons unsweetened cocoa powder
- 1 1/4 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 1/2 cups grated zucchini about 1 medium
- 1/2 cup paleo friendly chocolate chips optional
Preheat oven to 350 degrees. Prepare a 9x5 loaf pan with cooking spray. In a large bowl, combine coconut sugar, oil, applesauce, and eggs. Beat well.
In a separate bowl, combine flours, cocoa, baking soda, cinnamon, and salt. Slowly add to wet mixture and beat well.
Stir in zucchini and chocolate chips (if using). Pour batter into pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
