Ingredients

  • 1/2 cup coconut sugar
  • 3 tablespoons melted coconut oil
  • 3/4 cup unsweetened applesauce
  • 2 eggs
  • 1 1/2 cups almond flour
  • 1/2 cup tapioca flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/4 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 1/2 cups grated zucchini about 1 medium
  • 1/2 cup paleo friendly chocolate chips optional

Instructions

  • Preheat oven to 350 degrees.  Prepare a 9x5 loaf pan with cooking spray.  In a large bowl, combine coconut sugar, oil, applesauce, and eggs.  Beat well. 
  • In a separate bowl, combine flours, cocoa, baking soda, cinnamon, and salt.  Slowly add to wet mixture and beat well.
  • Stir in zucchini and chocolate chips (if using).  Pour batter into pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
