- 1 lb boneless skinless chicken breasts
- 2 1/2 cups low sodium chicken broth
- 14 ounce diced tomatoes
- 14 ounce tomato sauce
- 1 small onion diced
- 14 ounce black beans
- 14 ounce pinto beans
- 1 cup frozen corn kernels
- 3 tablespoons Homemade Taco Seasoning see recipe below
Combine broth, diced tomatoes, tomato sauce, onion, beans, corn, and taco seasoning in the slow cooker. Stir well.
Add chicken breasts to the liquid, pressing to submerge.
Cook on High for 3 hours or Low for 6-7 hours.
Remove chicken and shred or dice. Add back to the soup and stir to combine.
Serve with desired toppings.
