  • 1 lb boneless skinless chicken breasts
  • 2 1/2 cups low sodium chicken broth
  • 14 ounce diced tomatoes
  • 14 ounce tomato sauce
  • 1 small onion diced
  • 14 ounce black beans
  • 14 ounce pinto beans
  • 1 cup frozen corn kernels
  • 3 tablespoons Homemade Taco Seasoning see recipe below

Instructions

  • Combine broth, diced tomatoes, tomato sauce, onion, beans, corn, and taco seasoning in the slow cooker. Stir well.
  • Add chicken breasts to the liquid, pressing to submerge.
  • Cook on High for 3 hours or Low for 6-7 hours.
  • Remove chicken and shred or dice. Add back to the soup and stir to combine.
  • Serve with desired toppings.
