Ingredients

  • 1 1/2 lbs boneless skinless chicken thighs
  • 1/4 cup coconut aminos
  • 1/4 cup apple cider
  • 2 teaspoons toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 2 cloves garlic, minced
  • 12 leaves butterhead lettuce
  • 4 teaspoons sesame seeds toasted
  • 1/4 cup green onions

Instructions

  • Combine aminos, cider, sesame oil, ginger, red pepper flakes, and garlic in the slow cooker.  Whisk well.
  • Add chicken to the slow cooker and turn to coat 
  • Cook on High for 2 1/2-3 hours or Low for 5-6 hours.  Transfer chicken to a bowl and use two forks to shred the chicken.  Strain the cooking liquid.  Add enough cooking liquid to chicken to moisten.
  • Serve the chicken in the lettuce leaves, sprinkled with the green onions and sesame seeds.
