- 12 ounce bagged slaw I like a super slaw or broccoli slaw mix
- 2 cups cooked diced chicken breast
- 1 red bell pepper sliced
- 1 cup sliced English cucumber
- 1/4 cup chopped peanuts
- 1/4 cup hemp heart seeds
- 1/2 cup Homemade Thai Peanut Dressing see recipe below
In a large bowl, combine slaw mix, bell pepper, and cucumber. Stir to combine.
Add the chicken and peanut dressing. Toss well.
Sprinkle peanuts and hemp seeds over salad and serve.
Note: If making ahead, wait to combine the salad and dressing until just before serving.
