Ingredients

  • 12 ounce bagged slaw I like a super slaw or broccoli slaw mix
  • 2 cups cooked diced chicken breast
  • 1 red bell pepper sliced
  • 1 cup sliced English cucumber
  • 1/4 cup chopped peanuts
  • 1/4 cup hemp heart seeds
  • 1/2 cup Homemade Thai Peanut Dressing see recipe below

Instructions

  • In a large bowl, combine slaw mix, bell pepper, and cucumber. Stir to combine.
  • Add the chicken and peanut dressing. Toss well.
  • Sprinkle peanuts and hemp seeds over salad and serve.
  • Note: If making ahead, wait to combine the salad and dressing until just before serving.
