Turkey Paprikash Skillet

Ingredients

  • 1 T olive oil
  • 1 T butter
  • 1 small onion diced
  • 1 red pepper diced
  • 8 oz mushrooms chopped
  • 3 cloves garlic minced
  • 1 lb ground turkey
  • 2 T paprika
  • 2 tsp cumin
  • 1 tsp salt
  • 1/4 tsp red pepper flakes
  • 1 cup chicken broth
  • 1 cup nonfat plain greek yogurt or sour cream
  • 1 1/2 cups whole wheat pasta I used penne
  • 2 T chopped fresh parsley
  • Grated parmesan cheese optional

Instructions

  • In a large skillet, cook onion, red pepper, and mushrooms in olive oil and butter for 5 minutes.
  • Add ground turkey, garlic, paprika, cumin, and salt and cook until meat is browned.
  • Add broth, yogurt, and red pepper flakes and bring mixture to a boil.
  • Add pasta and cover, simmering for 8-10 minutes and stirring occasionally, until noodles are cooked. Stir in parsley and top with parmesan cheese if desired.
