- 1 tablespoon avocado oil or extra virgin olive oil
- 1 lb ground turkey
- 1 small yellow onion diced
- 1/2 large green bell pepper diced
- 1/2 large red bell pepper diced
- 15 oz low sodium black beans
- 15 oz diced tomatoes
- 1 1/2 cups low sodium chicken broth
- 1 cup jasmine rice or plain white rice
- 2-3 tablespoons grated raw cheddar cheese
- 1 tablespoon Seasoned Salt see recipe below
- 1 tablespoon chili powder
Heat oil over medium high heat in a large deep skillet. Add ground turkey and cook until browned, adding in the onion and bell pepper in the last couple of minutes of cook time.
Add beans, tomatoes, seasoned salt, chili powder, rice, and broth to the skillet. Stir well.
Bring to a boil, then reduce heat to low and cover the skillet.
Simmer for 15-20 minutes, until rice is cooked. Remove cover and sprinkle cheese over the top.
If desired, add chopped fresh cilantro before serving.
