Ingredients

  • 3 cups instant pot mexican shredded beef see recipe below
  • 4 cups cooked cauliflower rice
  • 4 cups romaine lettuce
  • 1 cup salsa
  • avocado (optional)
  • chopped cilantro
  • lime wedges

Instructions

  • Make beef according to instructions.  
  • Divide shredded beef, cauliflower rice, and lettuce among four containers.  
  • Add salsa and garnish with cilantro, lime, and avocado (if desired).  Adjust amounts of ingredients based on your own preference and how many bowls you are preparing.
