Meal Prep Chipotle Beef Bowls (Whole30 Paleo) – lunch has never been tastier with these meal prep chipotle beef bowls! Just like your favorite Mexican takeout and Whole30 complaint!
Hey Friends! Happy Weekend! If you’re meal prepping this weekend, I have a good one for you! These Meal Prep Chipotle Beef Bowls are super tasty, nutritious, and so easy to put together. Skip the pricey takeout for lunch and make your own copycat Chipotle burrito bowls!
I originally made this Mexican Shredded Beef in the Instant Pot and we loved it for dinner, in tacos, etc. It makes such a big batch, I decided to make these meal prep bowls with the leftovers and they were a huge hit, especially with my husband. Admittedly, I am not a big beef eater, but the flavor of this is so amazing, I was even hooked!
For my bowls, I used cauliflower rice, lettuce, and salsa, keeping it Whole30 compliant. If this isn’t a concern, go with all your favorite Chipotle add-ins! I didn’t add avocado to the bowls since I was prepping these ahead (they will brown), but I did pick up some individual servings of guacamole (Wholly Guacamole brand, found in most grocery stores) to add in. Perfection!
