Hey Friends! Happy Weekend! If you’re meal prepping this weekend, I have a good one for you! These Meal Prep Chipotle Beef Bowls are super tasty, nutritious, and so easy to put together. Skip the pricey takeout for lunch and make your own copycat Chipotle burrito bowls!
I originally made this Mexican Shredded Beef in the Instant Pot and we loved it for dinner, in tacos, etc. It makes such a big batch, I decided to make these meal prep bowls with the leftovers and they were a huge hit, especially with my husband. Admittedly, I am not a big beef eater, but the flavor of Mexican Beef is so amazing, I was even hooked!
How to Make Meal Prep Chipotle Beef Bowls
Next prepare your rice – either cauliflower rice, white rice, or brown rice are all great choices.
For my bowls, I used cauliflower rice, lettuce, and salsa, keeping it Whole30 compliant. If this isn’t a concern, go with all your favorite Chipotle add-ins!
Other bowl add-in ideas: grilled peppers and onions, Homemade Pico de Gallo , shredded cheese, sour cream, refried beans, etc.
I didn’t add avocado to the bowls since I was prepping these ahead (they will brown), but I did pick up some individual servings of guacamole (Wholly Guacamole brand, found in most grocery stores) to add in.

Meal Prep Chipotle Beef Bowls (Whole30 Paleo)
- 3 cups instant pot mexican shredded beef see recipe below
- 4 cups cooked cauliflower rice
- 4 cups romaine lettuce
- 1 cup salsa
- avocado (optional)
- chopped cilantro
- lime wedges
- Make beef according to instructions.
- Divide shredded beef, cauliflower rice, and lettuce among four containers.
- Add salsa and garnish with cilantro, lime, and avocado (if desired). Adjust amounts of ingredients based on your own preference and how many bowls you are preparing.
