- 1 lb ground beef
- 1 medium onion, diced
- 1 green bell pepper, diced
- 14 ounce diced tomatoes
- 2 tablespoons homemade taco seasoning see recipe below
- 15 ounce pinto beans
- 2.5 cups broth
- 1 cup corn kernels
- 1 teaspoon sea salt
Heat a large pot over medium high heat. Add ground beef and cook, breaking into crumbles for 3-4 minutes.
Add the green peppers and onions to the beef and continue cooking until the beef is completely browned.
Add tomatoes, beans, taco seasoning, broth, corn, and salt to the pot. Bring to a simmer and reduce heat to low. Simmer for 10-15 minutes.
Serve soup with taco toppings, if desired.
