Whipped Ricotta & Tomato Avocado Crostini

I could eat this Whipped Ricotta & Tomato Avocado Crostini every single day and be soooo happy. Not kidding. Okay, so that may have actually happened last week. Yep, here it is, my greatest weakness!! It’s the perfect combination of all my favorite things…toasted bread, light fluffy cheese, avocados, tomatoes, and tangy balsamic dressing.
This recipe also just feels like summer to me, which is thankfully and finally right around the corner! Yahoo!! I ADORE summer. If you live in Michigan, you can probably relate to this particular feeling of joy. Here’s the thing though…I’ve learned not to let myself get too excited too soon. Yesterday, I was sweating and enjoying nearly 80 degree temps. Tonight, I am huddled under a blanket in front of the fireplace still trying to warm up from watching a VERY long track meet earlier tonight. Good thing I know from experience this is totally normal for spring in the Mitten. When summer finally arrives for real, I will appreciate it that much more!

Whipped Ricotta & Tomato Avocado Crostini
Ingredients
- 1 cup ricotta cheese
- 1/2 cup feta
- 2 tsp olive oil
- 1 tsp lemon juice
- 1/2 tsp kosher salt
- 3/4 cup diced tomatoes
- 3/4 cup diced avocado
- 1 1/2 tablespoons balsamic dressing
- 1 baguette, sliced
- additional olive oil for brushing on bread
Instructions
- Preheat oven to 400 degrees. In a small bowl, combine tomato, avocado, and balsamic dressing. Set aside or refrigerate until ready to use. Place baguette slices on a baking sheet, brush lightly with olive oil, and cook for 6-8 minutes, until toasted. Let cool.
- In a food processor, combine ricotta, feta, olive oil, lemon juice, and salt. Pulse until smooth and creamy.
- Smear whipped ricotta on baguette slices and top with marinated tomatoes and avocadoes. Sprinkle with kosher salt if desired and serve.
