- 2 boneless skinless chicken breasts cut into bite sized pieces
- 1 cup quinoa, uncooked
- 1 red pepper, diced
- 1 green pepper, diced
- 1 onion, diced
- 1 cup water
- 1/2 cup barbecue sauce
Preheat oven to 375 degrees. Prepare a 13x9 baking dish with cooking spray.
Place uncooked quinoa in the bottom of the baking dish. Add peppers, onion, and chicken.
Combine water and barbecue sauce, whisking together in a separate bowl. Pour over quinoa mixture. Bake for 1 hour.
