My garden cucumbers are just getting going, but you can bet I will be making this salsa on repeat once the garden is overflowing with fresh cucumbers!

How to Make Cucumber Salsa
Begin by peeling the cucumber and cutting it lengthwise. Using a spoon, scoop out the insides.
Dice the cucumber and tomatoes.
Finely dice the jalapeno and red onion.
Combine cucumber, tomatoes, jalapeno, red onion, dill weed, salt, cilantro, and lime juice in a bowl. Toss well and refrigerate until ready to serve.

I prefer English cucumbers but any type of cucumber will work in this recipe. Just be sure to peel the cucumber and scoop out the seeds and middle, leaving only the firm crunchy portion for the salsa.

Stored covered in the refrigerator, it will keep for 2-3 days.
Can I make cucumber salsa without tomatoes?
Sure! Feel free to leave them and replace with more cucumbers. Chopped bell peppers are also delicious added to this salsa recipe and can be swapped for the tomatoes.
