This week’s theme is one pot wonders! With lots of work projects going on right now, I am in need of super easy meals that can be thrown together last minute with minimal steps and ingredients. So lots of skillet, Instant Pot, and sheet pan recipes it is. I hope you enjoy!

About the 7 Day Clean Eating Meal Plan
First and foremost, my clean eating meal plans are meant to be simple and family friendly. This is a great place to start if you’re new to clean eating or trying to implement healthy changes into your diet. I take all of the guesswork out by providing recipes that are free of processed food ingredients and easy to prepare with minimal steps. My Clean Eating Meal Plans include 7 dinner recipes that will typically feed a family of four (and sometimes even leftovers!), along with recipe suggestions for prep ahead breakfasts and lunches. This is the method that has worked best for me over the years for staying organized throughout the week, while still leaving a little wiggle room.
You may notice I share a lot of recipes that are made in the Instant Pot. This is because it makes meal time (and meal prep) a total breeze. It truly is a magical appliance that I couldn’t live without! If you don’t already own one, and want to take some of the stress out of your daily dinner routine, I highly encourage you to invest in an Instant Pot. As far as which model to purchase, I recommend the Duo. It’s one of the basic models without all the bells and whistles and is fairly inexpensive, but it does the trick and has held up perfectly for me over several years.
Of course, this meal plan is meant to be a guide only and meals can be switched or swapped to your liking. I like to keep my breakfast and lunch options relatively open but if you are wanting more structure there, feel free to add in more prepped ahead items. You’ll also find plenty of inspiration in my recipe archives and previous meal plans.
